The Mystery and Magic of Raw Honey

In our family, food is not something we scarf down to the rhythm of a sitcom laugh track or the SPLAT of zombie heads bursting in surround sound. For us, food IS family. It’s a connection we all share. But when I asked my daughter what raw organic honey is, she said without hesitating, “It’s honey made by bees that are happy because they’re free range.”

Big points for creative logic, I’ll give her that! But while I love the idea of happy free-range bees making magic honey, it just ain’t so. In fact, the truth about honey can be tough to find, especially if you don’t know what to look for.

Many honey brands sold in stores feature confusing labels. I honestly don’t know why. Perhaps there just aren’t enough free-range marketing experts in this world! What I do know is the truth about honey. More specifically, the difference between raw organic honey and non-raw honey, and why the former is actually better for you.

Regardless of what distributors say, there are only two key factors that determine whether honey is raw or not: texture and temperature (okay, and a hint of magic for the starry eyed out there!).

Temperature in this equation is largely affected by the collectors of the honey itself – those buzzing little gardeners with the pointy butts. When the honeybees are hard at work, their collective body temperature rises and warms the honey to35-degrees Celsius. And in fitting with the perfect balance of nature, this is the perfect temperature to stabilize the honey and keep the nutritious enzymes alive and kickin’.  As long as the honey remains near 35-degrees, it is considered ‘alive’ and ready to give your body a delicious and high-octane health boost. Anything too far above 35-degrees Celsius, and you’re headed for pasteurization.

But hold on a second … I have to back track a little (I’m allowed!). Normal heating of the honey, as done by bees while working near the hive, does not actually harm the rawness of the honey. But ‘flash heating’ is a one-way ticket to Deadsville– population of healthy vitamins and enzymes … ZERO. Flash heating is any sudden, sharp rise in temperature. A microwave is the perfect example of this. It radiates the honey and destroys its nutritional value.

So where does raw honey come from? (And don’t say, the grocery store!) Raw honey is collected straight from the bees who extract it. It is completely devoid of any heat, pasteurizing, or processing. This raw state allows the honey to preserve its nutritious elements, such as natural vitamins, living enzymes, and of course, nature’s love.

When buying raw honey, expect it to be very opaque, sometimes with scattered black dots. Certain varieties also feature a near-solid chunk of gritty and pasty honey. This is actually the honeycomb itself. It comes with just about everything produced when harvesting a beehive, like honey, pollen, royal jelly, beeswax, and even bees themselves. The black dots are sometimes made up of bee joints, which strangely enough, are completely safe to digest … unless the bees find out about it. Ha!

Also, raw honey is an alkaline-forming food. This means it becomes alkaline in the digestive system and does not ferment, thus preventing acid indigestion.
